Matcha Yuzu Bars

 Matcha Yuzu Bars!



Ingredients:

Crust:

- 12 tablespoons cold butter, cut into small pieces

- 6 tablespoons sugar

- 1 1/2 cups flour


Filling Ingredients :

- 1 1/2 cups sugar

- 1/4 cup flour

- 4 eggs

- 3/4 cup lemon juice

- 1 tablespoon dried Yuzu zest

- 2 tablespoons Matcha Powder


Optional:

- powdered sugar,


Cooking Directions:

1. Preheat oven to 350 degrees. 

2. Prepare an 8x8-inch pan with parchment paper.

3. In a food processor, combine butter, sugar, and flour for about 30 seconds, or until the dough balls up together. (If you don't have a food processor, you can mix by hand with gloves on.(

4. Press dough into prepared pan, *if you mixed by hand, put the pan into the fridge to chill for 20 mins and then bake for 22-25 minutes. *You may omit the latter if you have a food processor.

5. Meanwhile in 2 medium mixing bowls, whisk together the remaining sugar, flour, eggs. In one bowl, add lemon juice, and lemon zest and in the second bowl, sift Matcha Powder into the wet mixture and mix thoroughly.Allow mixture to sit for at least 15 minutes while the crust is in the oven.

7. Once the crust has finished baking, take it out of the oven and whisk mixtures once more just before pouring both of the mixtures onto the top of the crust. You want to pour each mixture at the same time in adjacent corners of the crust to create a contrast of colors and flavors. 

8. Swirl both mixtures to make a pretty design.

9. Bake once more for 20-22 minutes, until just set and before it begins to brown.

10. If baking with a silicone mold, let it sit in the mold until it cools completely to remove. However, if you are baking with a metal pan/tray, remove the giant bar from pan and let it cool completely on a wire rack. 

11. Once the bar has cooled, slice it into squares and dust with powdered sugar, if you want to add an additional design.
